CRISPY FRENCH FRIES

Double-fried method for crispier French Fries.


Ingredients:

1kg Russet or all purpose potatoes
oil for deep frying
salt to taste

Method:

1. Peel potatoes and cut into sticks.
2. Rinse in water immediately (do not soak) and pat dry with paper towels.
3. Preheat oil, fry the potatoes in small batches. To double-fry, fry first for 5-6
minutes in moderately hot oil. Remove before they turn golden, drain and cool.
4. Heat oil and refry for 2-3 minutes until golden brown.
5. Pat dry with paper towels and sprinkle over with salt.

BUTTER CAKE

Ingredients:

250g butter
200g castor sugar
6 eggs
240 self-raising flour
2 tablespoon orange juice
2tablespoon sweetened milk

Method:
1. Cream butter and sugar until light and creamy.
2. Add egg one at a time.
3. Add orange juice and milk.
4. Then fold in the self-raising flour.
5. Pour the mixture in a baking tin and bake in a
preheated oven for about 45 minutes to 1 hour.
